Recipe Sunday - Zucchini Pasta!

I have a love affair with all things pasta. And I have tried every alternative to lower the carbs, grains, gluten etc so that it is easier on my stomach. And nothing seems to have the same appeal or taste.

I finally saw a post on Pinterest about turning vegetables into pasta. I was shocked that I hadn't seen this before, nor tried it before. The options are limitless! I decided to try this for Valentine's Day, and am very pleased with the results.

I made zucchini pasta with an avocado cream sauce. I didn't have a noodle maker, so I simple peeled the zucchini with my veggie peeler. Worked just fine, although I think we are going to invest in a pasta/noodle maker very soon.

The process was super simple. The final product came out great. I know that the texture is not exactly the same, but it is still pretty good. The sauce came out great, and I was even more surprised at how filling this dish was.

I can't wait to try so many different options. Perhaps I'll try a carrot pad thai, zucchini and red sauce, cucumber and capers, sweet potato and marinara.....literally any sauce and veggie combo seems to be a great idea!

Try this, even if you're skeptical. Trust me. It'll open a whole new door in solutions to your pasta addiction.

Here's the recipe I made:

Ingredients:

3 zucchini's

1 avocado

1/2 lemon juiced

2-3 cloves garlic minced

2 tsp mayo (or Greek yogurt etc, whatever your go to substitute will do here)

Salt and Pepper to taste

12 shrimp to top pasta with (whatever seasoning you like to cook shrimp in)

Directions:

1. Peel zucchini's and set aside

2. In separate bowl scoop out ripe avocado and squeeze 1/2 lemon into bowl. Add mayo, salt and pepper, and half the garlic.

3. Boil water in saucepan. Once it is boiling, blanch zucchini noodles for about 30 seconds.

4- Drain in strainer, and put back into sauce pan. Put remainder garlic and saute for about 30 seconds.

5- Then add avocado cream sauce, and stir constantly for about 1-2 minutes to cook longer.

6- Plate and top with shrimp if desired.
