Sunday Recipe-Quinoa Crusted Chicken Breasts

Hi Guys!
I tried a new recipe this week, and it turned out pretty good! I have been thinking of every single thing we can make with qunioa.
So here we have quinoa crusted chicken breasts. Super easy to make, and if you're used to making breaded chicken breasts this might be right up your alley in a healthier way.
4 (4-6 ounce) boneless, and skinless chicken breasts
salt and pepper to taste
1/4 cup flour (I used almond flour)
1 egg, lightly beaten
1 1/2 cups cooked quinoa
1 teaspoon italian seasoning blend (I used dry basil and garlic powder)
1 cup mozzarella, shredded (I did not use this because I try to stay away from dairy)
1/4 cup parmigiano regginao (parmesan), grated (I did use this on top)
2 cups marinara sauce, hot (If you want to use this for serving, it does taste great. Otherwise without is just as yummy!)
Directions:
Season the chicken with salt and pepper, dredge in flour, dip in egg and coat in the mixture of the quinoa and seasonings.
Place the chicken on a rack on a baking pan and bake in a preheated 400F oven until cooked and lightly golden brown, about 25-30 minutes.
Transfer the chicken to a baking dish, top with the cheese and broil until it has melted, about 2-4 minutes.
Plate the chicken and top with hot marinara sauce or eat plan with a salad or steamed veggies! Enjoy!
