Sunday seems to be food-prep day around fitness lifestyles. And while my boyfriend and I try to eat as healthy as possible, eating chicken and veggies every week gets old really fast.
I decided this past Sunday to a totally new food-prepx menu. Here is what we made, and they all turned out fabulous!
Sweet Potato and Quinoa Cakes:

We got the recipe from a favorite website of mine called How Sweet It Is. Her recipe however had a blackberry salsa on top, which we nix due to storage and time purposes.
